Kayak to Kitchen: FRESH Saba Sushi & Poke Don! (Catch & Cook)

Kayak Fishing for a Tasty Surprise

Hey, welcome back to another episode of Fishing Life Awaji! I’m Daiki, and today I’m out on the kayak again. My target is the delicious Jack Mackerel, a fish that, personally, I think is even tastier than Yellowtail and Red Snapper.

A Day on the Water

The fishing spot is about two miles from shore, with a water depth of around 38 to 40 meters. I’m using a

sabiki rig, which has small lures that imitate white bait. My fish finder is showing a great signal—lots of white bait in the middle of the water column and signs of Jack Mackerel near the bottom.

The day started off slow, with the current moving sluggishly. However, as soon as the current picked up, the fish “suddenly turn on”. I started catching one Jack Mackerel after another.

Then, something unexpected happened. While reeling in a fish, I got a huge tug on the line—obviously not another Jack Mackerel. Fighting a big fish on a light, 12 lb sabiki line is a thrilling experience. After a strong fight, I managed to land the surprise catch: a big Yellowtail! It wasn’t what I was targeting, but it was a welcome bonus.

From the Sea to the Kitchen

Back at home with my catch, I’ve cleaned all the fish by scaling, gutting, and removing the heads. Today, I’ll be making two of my favorite dishes:

Sabazushi (Mackerel Sushi) and Yellowtail Poke.

1. Sabazushi (Mackerel Sushi)

This is a classic dish often served in sushi restaurants, and it’s the first thing I think of when I catch mackerel.

  • Cure & Marinate: First, the mackerel fillets are salted to dehydrate them. Then, they are marinated in a mixture of vinegar and kelp for about an hour.
  • Assemble: After marinating, the fillet is placed on top of a log of prepared sushi rice and pressed into shape.

2. Yellowtail Poke

This is one of my favorite ways to prepare yellowtail.

  • Mix: Cubed yellowtail is mixed with sesame seeds, soy sauce, mirin, sesame oil, salt, and a little bit of honey.
  • Serve: The poke is delicious served over a bowl of rice. For adults, add a bit of wasabi for an extra kick.

What started as a simple trip for Jack Mackerel ended with an unexpected battle and two incredible meals.
