It was extremely cold this week in Japan but I as usual went fishing on a calm day. In this video I wanted to introduce one of my most favorite fish dishes ever since childhood.
Recipe for Tai Chazuke
- Marinade the red snapper sashimi in dashi sauce.
Dashi sauce: Soy sauce, Mirin, Sake, Sesame oil, Salt - Dashi soup
Torch the bones and simmer it with salt, sake, mirin and soy sauce. - Presentation
Put marinade sashimi on rice, sprinkle Arare and Nori on top. Pour hot dashi soup into the bowl.
